Asian Sheet Pan Salmon


The beauty of a sheet pan dinner is the one pan. As a mom of two I shy away from dishes that take too long or require too much prep. This dish is great because you can get it going whenever you have time and then finish it off 14 minutes before you want to eat.

Ingredients:

2 x 6-8oz pcs. Salmon fillets, center cut

3 baby bok choy, cut in quarters lengthwise

1 box (6 oz) shitake mushrooms, stems removed

8 baby sweet potatoes

¼ cup soy sauce or tamari sauce

2 Tablespoons rice vinegar

3 Tablespoons honey

2 cloves garlic, minced

1 inch piece of ginger, peeled and minced

3 Tablespoons sesame oil

2 Tablespoons sesame seeds

¼ teaspoon kosher salt

¼ teaspoon black pepper

2 scallions, very tops and bottoms removed and sliced thinly

Directions:

Preheat your oven to 375 degrees, or 350 degrees on convection.

Spray half of a sheet tray (13x18) with a little bit of oil spray.

Slice your sweet potatoes lengthwise and line them, face down on the sprayed side of the sheet tray. Bake for 20 minutes uncovered.

In a small bowl mix together your soy sauce, vinegar, honey, garlic, ginger and sesame oil.

Remove your tray from the oven and flip your potatoes flesh side up. Take your bok choy, mushrooms, and salmon and neatly line them onto your sheet tray. Take your prepared sauce and drizzle over your vegetables and fish. Using a basting or pastry brush, spread the glaze onto everything. Sprinkle with salt and pepper. Bake uncovered for 10 minutes. Then switch your oven to broil (high) and finish for an additional 3-4 minutes.

If your fish is not center cut and it is from the tail end it will cook faster so adjust accordingly.

To garnish, take your sesame seeds and scallions and sprinkle over the hot food.

Plan Ahead:

This is such a fast and easy plan ahead dinner. All of the vegetables can be cut and the sauce can be prepped the day before. Even the sweet potatoes and be par baked the day before. Cook the final dish on the day you are serving. If you need to cook a little ahead of serving time, then just broil before serving to warm. It will need the full 4 minutes of broiling.
