Peanut Butter Pecan Granola with Cacao Nibs 

 

Ingredients:

3 cups old fashioned rolled oats

1 cup unsweetened coconut flakes

1/2 cup pecans

1/2 teaspoon cinnamon

1/2 teaspoon kosher salt

1 teaspoon vanilla extract

1/4 cup maple syrup

3 tablespoons avocado oil

2 tablespoons organic peanut butter

1/4 cup cacao nibs

 

Directions:

Take all of your ingredients and put them into a very large mixing bowl. Using a gloved hand mix all of the ingredients really well. You want to make sure that all of the oats are covered with the ingredients evenly. Spread the granola out on a parchment lined baking sheet. Bake for 12-14 minutes rotating once halfway through. 

 

Plan Ahead:

This granola keeps well in an airtight container or zippered bag for up to 10 days.
